We believe that perfection is the result of time and effort dedicated to details. Therefore, we have decided not to increase our production volume, in order to continue working with the utmost rigor and care in each of the tasks performed.

A clear example of our rigor and commitment is the absence of Patrón Santiago in those years when the quality does not measure up to what is expected of the brand.

HARVEST

Manual harvesting in cases of 16 kilos. The proximity of the vineyards to the winery allows us to process the grapes immediately after being separated from the plant in order to preserve all its organoleptic properties to the maximum.

VINIFICATION

Aiming to work meticulously, a manual selection of grains and bunches is carried out in the winery followed by fermentation in small stainless steel tanks with 3,000 and 5,000 L capacity.

BLENDS

Achieving complex wines involves blending different wines in search of the best possible combination. In order to have absolute flexibility in this task, the winery has been equipped with tanks of varying volumes (1,000, 3,000, 5000, 8000, 11,000 and 14,000 L).
